Vinegar-Making Vessel No. 04

This vessel is part of a special collection exploring wild clay, fire, natural materials, and ancestral food-preservation methods. 
 
Hand built with stone tools from gathered wild clay, the vessel was pit-fired to create its deeply textured, smoke-blackened surface, then waterproofed with beeswax infused with mugwort and California sagebrush.
 
The opening is covered with walnut-dyed cotton, secured with hand-processed yucca fibers that were also dyed with walnuts. The cloth protects the ferment while allowing the airflow necessary for vinegar making.
 
This is not simply a vessel inspired by fermentation—I use vessels like this to make some of my own wild vinegars. It exists somewhere between a working fermentation vessel and a sculptural object.

A Simple Wine Vinegar Recipe for this vessel:
 
500 ml (approximately 2⅛ cups) red wine, 12–14% alcohol
500 ml (approximately 2⅛ cups) water
300 ml (approximately 1¼ cups) raw, unpasteurized vinegar containing live culture, such as Bragg
 
Combine everything in the vessel and cover it with the cloth. Keep the vessel at approximately 75–85°F (24–30°C). Begin tasting after six weeks; allow it to continue longer if needed. Transfer to a bottle if ready and start a new batch.

Priority mail takes two to five days to deliver in the US. International orders may take much longer to arrive.
